Here is one of my knives at work: 01 toolsteel with white Corian* scales

This knife carried out all the tasks below without having to put an edge back on it once.

When finished it was thoroughly cleaned, an edge put back on it with a steel and then re-polished. Although this knife was sold as used, the condition was as new and as if it had never been used.

*Corian is a kitchen worktop substance. Part natural stone, part acrylic resin. They are an ideal handle material as they are fully stabilised and will not shrink, warp or let in any fluids or water. They are also very heavy so that you know you have a knife in your hand.
